Use of Roselle Calyx Wastes for the Enrichment of Biscuits: An Approach to Improve Their Functionality

The objective of the present study was to evaluate use powder made out Roselle Calyx Wastes (RCP) in developing a biscuit formulation with acceptable sensory value. calyxes were infused water 1:10 ratio. residual dried at 50 °C for 16 h, grounded, sieved through mesh, and stored plastic bags until used. formulations enriched RCP 0% (BC), 5% (BRCP5), 10% (BRCP10), 15% (BRCP15). amount added did not change protein content. However, addition significantly affected biscuit’s color; lightness parameter (L*) decreased as RP content increased from 69.66 49.04. evaluation showed that control best accepted. As antiradical activity, highest activity presented by BRCP15 (587.43 µmol Trolox/100 g dwb). On other hand, BRCP5 189.96 dwb. Therefore, enrichment could be used commercialize functional product.
